The best part about this dish is that the ingredients can vary each time, and it is always delicious. I call this the “Clean The Fridge” Veggie Pasta because I literally use whatever vegetables I have handy. We usually have broccoli, spinach, and green beans, so I use those often. 90% of the time, the veggies are about to go bad, so throw ’em all in together. Have spinach about to turn? Chop it up and throw it in! I love the flexibility it offers based on what veggies you like and what you have available to use. The 3 ingredients that always stay the same are pasta, seasoned canned tomatoes, and pasta sauce.
Todays ingredients were as follows:
1 red bell pepper
1 green bell pepper
1 yellow onion
Handful of broccoli
Handful of chopped spring mix -It cooks down, so kids never notice.
handful of French green beans
Can of corn
1 can of diced tomatoes-I always use the Del Monte with basil, garlic & oregano- No Salt added. So good and flavorful
Choice of pasta- I use veggie or Banza protein pasta
Chicken- I prefer the convenience of grocery store rotisserie chicken
Chop all of the veggies and start to sauté in olive oil in a large skillet. Start to boil your preferred pasta in a separate pot.
Once the veggies have sautéed and are softer, it is time to add all of the canned ingredients. You will need the liquid from the cans, so do not drain. At this time, you can also add in the pasta sauce. I use half of the jar.
As for seasoning, it is all personal preference. I like to add a bit of my favorite, Jane’s Krazy salt, garlic powder, or garlic salt. If you are watching you sodium, you might want to stick with Mrs. Dash or garlic powder.
Stir up all of the ingredients and bring mixture to slight boil until all veggies are cooked through and sauce is hot. At this time, you can add your already cooked chicken to skillet to heat it up with the sauce. I count my macros, so I do not combine my chicken, I add it to my bowl after I get my serving, that way I have a better measurement of my protein intake.
By this time your noodles should be ready to be added to the skillet. Simply drain and combine the pasta to the sauce and mix everything up. You are now ready to serve! This dish is quick, easy and delicious! Enjoy!
Tips to get my kids to eat it: Chop veggies very small. The smaller they are, the less they notice. Add more sauce to their bowl. My kids LOVE anything with red sauce, so more sauce covers up the green veggies. Add cheese to their bowl. The cheese also helps cover the veggies and makes it creamier.
