One thing my daughter, Kenleigh, can’t turn down is anything sweet. Cookies, cake, ice cream, you name it, she’ll eat it. Helping me make cookies is one of her favorite things because she knows she gets to devour the cookies when we are done. Its a win-win situation for both of us because I get that special one on one time with her. Any mom knows how fast they grow, so any second with her is precious.
I am not a talented baker by any means, but I can follow a recipe. I usually use the Toll House recipe, but this time I wanted to change it up a bit. I got this recipe from Jessie James Decker’s book, Just Jessie. I absolutely love Jessie, and I just wish we were friends in real life! I enjoyed reading her book. If you love her like I do, go get a copy! She also shares some other great recipes that I can’t wait to try. Her recipe is similar to Toll House, so I didn’t have to tweak much. The cookies were SO good, and definitely Kenleigh approved!
1 cup butter, softened
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup cane sugar
1 cup light brown sugar
1 teaspoon pink Himalayan salt
2 teaspoons vanilla extract
2 large eggs
2 cups semisweet chocolate chips
Pre heat oven to 375° F
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
