There is no doubt that pizza is a weakness of mine. We love to have “make your own pizza night.” Kenleigh loves to be able to create her own and add all of the toppings herself. Its super fun, try it with your kids if you haven’t.
I posted the picture of my pizza on my Instagram and got many questions about the ingredients, so I thought I would share.
This time around, I was trying to make mine a little more carb conscious so
I decided to try a cauliflower crust. I got this Caulipower crust in the freezer section of my grocery store.

I wanted to give mine a Greek twist, so I added the following ingredients:

Garlic hummus as the base instead of traditional pizza sauce.

Red Onion
-
Cooked cubed chicken breast
-
Artichokes
-
Chopped cherry tomatoes
-
Olives ( I chose to omit)
-
Feta Cheese
-
Salt and Pepper
To bake the pizza, we used our Traeger smoker. Sounds weird, I know, but if you have one of these amazing things, try it! I will do a separate post about the Traeger because we love and use it SO much.
To bake the pizza in the oven, simply follow the directions on the back of the Caulipower box. I find that feta cheese melts a bit slower, so I cooked it a couple minutes longer to ensure the crust was crisp and the cheese was hot.
