My mom started making this dip years ago, and it was instantly a hit. She got the recipe from a friend, who got it from a friend named Amy. We don’t have a clue who Amy is, but the name stuck! With only 3 ingredients, it is SO easy and SO good. Instead of traditional queso, the cream cheese gives it creaminess that regular cheese can’t. This is a crowd pleaser for sure!
- 1 pound of ground sausage- I use Jimmy Dean Original
- 1 can of Rotel Original or Mild
- 2 packages of cream cheese
- Cook ground sausage until crumbled and no longer pink in the middle.
- Add can of Rotel & both packages of cream cheese
- Stir slowly on low to medium heat until cream cheese is melted and all ingredients are combined.
Ta Da! That is it, it is ready to serve. You can add it to a Crock Pot to keep it warm if needed.
It is best served with tortilla chips or Fritos. Enjoy! Thank you, Amy, whoever you are! 🙂
Optional- It can be cooked in a Crock Pot if you have the time to wait. Simply add the cooked sausage in with the Rotel and Cream Cheese in a Crock Pot. Cook on medium and stir occasionally until cheese is melted.
